Winter Special Spinach Soup Recipe: As soon as winter starts, we all become active about food and drink. Especially such things which are tasty to eat, as well as healthy and keep us warm from inside. The first name that comes to mind for this is ‘soup’. Soup not only keeps us warm from inside but also strengthens our immunity and can also reduce digestive problems.
You must have had vegetable soup, sweet corn soup, tomato soup many times. But this time you need to try something different. Spinach is mostly available in winters, due to which Palak Paneer is prepared and eaten with great enthusiasm in every household. But try making this spinach soup this time, the easy recipe of which is given below.
Winter Special Spinach Soup: Ingredients
15 grams chopped onion
5 grams leek (a type of spring onion)
5 g carrot and celery bouillon cubes
30 grams butter
50 grams fresh spinach
100ml vegetable stock
3 grams salt
1 gram freshly ground black pepper
20 ml fresh cream
fresh cream to garnish
Method:
1. In a large saucepan over medium heat, sauté onion and leek in butter until translucent.
2. Add water and bouillon cubes. Let it boil. Now reduce the flame, cover and simmer for 20 minutes till the vegetable becomes soft.
3. Add the spinach and cook for another 2 to 4 minutes, till the spinach becomes soft.
4. Now mix the soup puree in a blender. Return to the saucepan and cook well, season with salt and pepper.
5. On low heat, add cream and butter just before boiling. You can use a blender to mix the cream completely.
6. Now serve this soup hot along with garnish with a few drops of fresh cream on top.
