Rajasthani Kadhi Recipe: Ingredients
- Sour curd – 1 cup
- Gram flour – 1/4 cup
- Rai – 1 tsp
- Red chilli powder – 1 tsp
- Ginger paste – 1 tsp
- Fenugreek seeds – 1/2 tsp
- Asafoetida – 1/4 tsp
- Dry red chilli – 2
- Turmeric – 1/2 tsp
- Finely chopped green chilli – 1
- Green coriander – for garnishing
- Desi Ghee
- Salt – as per taste

Method
- To make Rajasthani Kadhi, first put sour curd in a big vessel.
- Now add gram flour to it, churn it well with the help of a churner, and add some water to it.
- Now add chilli powder, turmeric and salt as per taste to this solution.
- Now take a large pan and heat it on medium flame.
- When the curry becomes hot, add ghee to it and then fry it by adding mustard seeds, fenugreek seeds, dry red chillies and asafoetida.
- Now add finely chopped green chillies and ginger paste and mix.
- When all these spices are cooked well, then put curd-gram flour solution in it.
- Now keep stirring it continuously with the help of a ladle till it comes to a boil.
- After this, cook the curry for 15 to 20 minutes.
- Now garnish it with coriander leaves.
- Your curry is floating, if you want, you can also add pakoras to increase the test. But it depends on your wish.
