Ingredients:
– 1/4 cup maple syrup
– 1/2 cup applesauce
– 3 large eggs
– 2 tbsp vanilla essence
– 1 small zucchini, shredded
– 2 cups almond flour
– 1/3 cup cocoa powder
– 1 tbsp baking powder
– 1/2 tbsp baking soda
– 1/2 tbsp cinnamon powder
– 1/2 tbsp kosher salt
– 1/2 cup bittersweet or semi-sweet chocolate chips

Instructions to make:

1. Preheat the oven to 350°F.
2. Grease a standard muffin tin with non-stick cooking spray or use muffin liners.
3. In a large bowl, whisk together maple syrup, applesauce, eggs, and vanilla.
4. Add shredded zucchini to the mixture and stir well.
5. Incorporate almond flour, cocoa powder, baking powder, baking soda, cinnamon powder, and kosher salt. Mix until well combined.
6. Fold in chocolate chips.
7. Divide the batter evenly into 12 muffin cups.
8. Bake for approximately 20-22 minutes or until a toothpick comes out clean.
9. Serve warm or at room temperature.
