Lauki Barfi Recipe: On hearing the name of bottle gourd, many people’s mouth becomes numb. Actually, many people do not like the vegetable of bottle gourd. Although many types of nutrients are present in the gourd. Still, people shrink their noses and mouth before eating gourd. In such a situation, today we are going to tell you about one such dish of the gourd.

The name of this dish is ‘Lauki ki Barfi’. Actually, gourd barfi can be eaten on a fruit diet also. Mahashivratri is celebrated on the 18th of February, on this day Shiva devotees keep a fast. The energy level becomes low due to fasting, so eating gourd barfi increases the energy level. Come, today we will tell you about the method of making gourd barfi for Shivratri.

Lauki ki Burfi Recipe: Ingredients

  • Gourd – 500 grams,
  • Sugar – 200 grams,
  • Mawa / Khoya – 200 grams,
  • Cashews – 1 tbsp (finely chopped),
  • Pistachios – 1 tsp (finely chopped),
  • Chironji – 1 tsp,
  • Desi ghee – 1 tsp,
  • Green cardamom – 2-3

Method

  • To make Lauki Barfi Recipe, first peel and wash the gourd.
  • Now cut the gourd and separate its seeds, and grate it.
  • Now put 2 liters of water in the pan and boil it on the gas. When the water becomes hot, put grated bottle gourd in it.
  • Turn off the gas when the water comes to a boil, after that filter the water and separate the bottle gourd and let it cool.
  • When the bottle gourd cools down, squeeze it well so that all the water gets drained out.
  • After this, put gourd and sugar in a pan and cook on low flame.
  • Keep in mind that, keep stirring the gourd in between, so that it does not burn.
  • When the bottle gourd water is about to dry up, add mawa/khoya and cashew nuts and cook while stirring.
  • Now mix it while stirring it well, and when it reaches a solid state, add cardamom seeds to it and turn off the gas.
  • Now grease a plate with ghee, and then spread the bottle gourd mixture in that plate.
  • Now put chironji and pistachio on top of the plate and press them to make them equal.
  • Now keep this mixture to set for 2 hours.
  • When the gourd mixture is set well, cut it into desired shape.
  • Delicious gourd burfi is ready, now store it in an air tight container.
  • You can eat this Barfi even during fasting, and you can eat it whenever you feel like it.
