Doda Burfi Recipe: Ingredients
Sprouted wheat – 1 cup, Curd – ¼ cup, Milk – 1 liter, Brown sugar – ½ cup (90 grams), Coconut – ½ cup, grated, Cashew nuts – ¼ cup, Cardamom – ½ tsp, Nutmeg powder – ¼ Teaspoon Milk – 1 tbsp Cocoa powder – 1 tsp Ghee – ¼ cup (60 grams)
Ingredients for Glucose Syrup
Sugar – ¼ cup (55 grams), Lemon juice – 3-4 tsp, Salt – ½ pinch
Method of sprouting wheat
To germinate wheat, first of all you have to wash ½ cup wheat thoroughly and soak it in water overnight. After this, drain it on the second day by laying a cotton cloth on the sieve.
After this, cover it well with a cloth and soak it by pouring water on it. After this, when the water drains out, place a small bowl on a plate and keep a sieve on it for two days. After two days sprinkle water on it and keep the cloth wet, after that wheat will sprout in two days.
How to make Glucose Syrup
Put 4 tbsp sugar and 2 tbsp water in a large pan and cook on low heat till the sugar dissolves. When the sugar dissolves, add ½ pinch of salt and 2-3 drops of lemon to it. After this, when a string comes, the glucose syrup will be ready and take it out and keep it.
Batter recipe
After this, coarsely grind the sprouted wheat and make it fine. After this add ground sprouted wheat and ¼ cup curd to the pan and mix it. After this add 1 liter full cream milk and cook it on low flame.
After this, when it starts getting thick, add ½ cup brown sugar (you can add jaggery or jaggery sugar instead) and mix.
When it thickens, add ½ cup grated coconut, ¼ cup finely chopped cashew nuts, ½ tsp coarsely ground cardamom and ¼ tsp nutmeg powder and mix.
After this, when its color is not too brown, mix 1 tbsp milk and 1 tsp cocoa powder in a bowl and put it in the pan. After this add glucose syrup and mix it well.
Doda Barfi Recipe
After this grease a tray with ghee and pour the batter on it. Now apply ghee on the spoon and make it uniform. After this, put some thinly sliced almonds and cashews on it and press it lightly. Now keep it in the fridge for 2 hours to set. After this, cut it into your desired shape and serve and enjoy.
