Mexican Green Spaghetti is a creamy, flavorful dish made with a rich green sauce of poblano peppers and cheese. Perfect for a unique pasta experience!
- 3 roasted poblano peppers (seeded and peeled) - 1 cup sour cream - ½ cup cream cheese - 1 garlic clove - Salt and pepper to taste
- 2 cups spaghetti - Water for boiling - Salt - 1 tbsp olive oil
Cook the spaghetti in salted boiling water until al dente. Drain and set aside.
Blend roasted poblano peppers, sour cream, cream cheese, garlic, salt, and pepper until smooth.
Heat the green sauce in a pan over low heat. Add the cooked spaghetti and toss until fully coated.
Top with grated cheese, cilantro, or a sprinkle of chili flakes for extra flavor. Serve hot and enjoy!
