Sunny Priyan
1 cup sooji/rava, 1 cup paneer, 1 chopped onion, 1-2 green chilies, 1 tsp mustard seeds, curry leaves, salt, oil, 2 cups of water, and chopped coriander.
Gently roast the rava/sooji until golden and aromatic. Set it aside.
In a pan, heat oil or ghee, add mustard seeds, curry leaves, chilies, and onions. Sauté until the onions turn soft and golden.
Stir in the paneer and cook for a couple of minutes until lightly golden and flavorful.
Pour in hot water, season with salt, and gently stir in the rava. Mix well to avoid lumps.
Garnish with fresh coriander and a drizzle of ghee. Serve hot and enjoy.
