Sunny Priyan
1 cup oats, 1 tbsp oil or ghee, 1/2 tsp mustard seeds, 1/4 cup chopped onions, 1-2 green chilies, 1/4 cup mixed vegetables, 2 tbsp roasted peanuts or cashews, salt to taste, 1.5 cups of water.
In a pan, lightly roast the oats on medium heat for 2–3 minutes until golden. Set aside.
Heat ghee or oil, then add mustard seeds. Once they splutter, add onions, green chilies, and saute till soft.
Toss in mixed vegetables and roasted peanuts or cashews. Cook for few minutes.
Mix the dry roasted oats, salt, and water. Stir well and let it cook on low heat for 4-5 minutes until water is absorbed.
Take off the pan. Now garnish with fresh coriander if desired, and serve warm.
