500g paneer, 1/2 cup sugar, 1/2 tsp cardamom, 2 tbsp beetroot juice, 1 tsp vanilla, 1 tbsp cocoa, white chocolate shavings, mint leaves.
Crumble paneer, mix with sugar until smooth, and add cardamom for flavor.
Heat ghee in a pan.
Add beetroot juice (or food coloring), mix in cocoa powder, and enhance with vanilla extract.
Divide mixture into balls or discs, shape as desired, and refrigerate for 30 minutes to set.
Garnish with white chocolate shavings and fresh mint leaves for contrast and color.
Serve chilled, best enjoyed with masala chai or coffee.
Use beetroot juice for natural color, blend paneer for smoothness, and add saffron or rose water for extra flavor.
