Wash and soak rice for 30 minutes, then drain and set aside.
Heat ghee and oil in a pressure cooker, add whole garam masala, and let them sizzle.
Saute onions until golden, then add ginger garlic paste and cook for a minute.
Add beetroot, saute for 5 minutes, then mix in spice powders and salt.
Add rice, mix for 2 minutes, then pour in water, milk, and coriander leaves, and bring to a boil.
Pressure cook for 1 whistle, simmer for 5 minutes, then fluff the rice and set aside for 10 minutes before serving.
