Soak rice for 30 minutes, then drain and set aside.
Heat oil in a pan, add cinnamon, cardamom, and cumin seeds, and mix well.
Saute onions for 2 minutes, then add salt, chilli powder, and coriander powder.
Add grated beetroot and soaked rice, mixing well.
Pour in water, bring to a boil, cover, and simmer for 15-20 minutes.
Let it rest for 10 minutes, fluff with a fork, and serve with raita.
