Puff pastry, mushrooms, spinach, ricotta, Parmesan, onion, garlic, egg, olive oil, salt, and pepper.
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Heat olive oil in a pan. Sauté onions, garlic, and mushrooms until soft. Add spinach and cook until wilted.
Roll out the puff pastry on a floured surface. Place the veggie mixture in the center.
Fold the pastry over the filling, sealing the edges. Brush with olive oil for a golden finish.
Place the Wellington on the baking sheet and bake for 25-30 minutes, until golden and crispy.
Let it cool for a few minutes, then slice and serve. A perfect veggie feast.
