1 cup chopped pistachios (unsalted), 200g milk chocolate, 1/4 cup white chocolate (optional), 1/2 teaspoon vanilla extract (optional).
Break the dark or milk chocolate into pieces and melt it in a heatproof bowl in the microwave for 30 seconds.
Chop the pistachios into pieces and set them aside.
Once the chocolate is melted, stir in the pistachios and the vanilla extract (optional). Mix well.
Pour the chocolate-pistachio mixture onto a baking sheet lined with parchment paper. Spread it evenly with a spatula.
Refrigerate chocolate-pistachio mixture for 30-60 minutes. Once set, drizzle with melted white chocolate and serve.
