To make this 500g mutton, 1 onion, 2 tomatoes, 2 green chilies, 1 tbsp ginger-garlic paste, tamarind extract, coriander leaves, spices.
Wash and clean the mutton pieces. In a pressure cooker, cook the mutton with water, turmeric, and salt until tender.
In a pan, heat oil and add cumin seeds, green chilies, and sliced onions. Sauté until the onions turn golden brown.
Add ginger-garlic paste and sauté until the raw smell disappears. This is where the aroma starts building.
Add chopped tomatoes and cook until soft. Then, mix in red chili powder, coriander powder, and garam masala. Cook for a few minutes.
Add tamarind extract and water to adjust the consistency. Bring it to a boil and simmer for another 10-15 minutes.
