1 cup rice, 1 tbsp oil, 1 onion, 2-3 peppers, 1 tsp pepper, 1 tsp salt, 1 cup broth, parsley (optional).
Rinse 1 cup rice, cook with vegetable broth.
In a pan, heat 1 tablespoon of olive oil. Add 1 finely chopped onion and sauté until golden and fragrant.
Add 2-3 sliced bell peppers to the pan and cook for 3-4 minutes until tender.
Season the veggies with 1teaspoon of black pepper and 1teaspoon of salt. Stir to combine.
Once the rice is cooked, add it to the pan with the sautéed veggies. Mix everything together.
Your easy, flavorful pepper rice is ready to serve! Garnish with fresh parsley and enjoy.
