Preheat the oven to 350°F. Arrange a rack in the middle of the oven.
Coat a 12-cup Bundt pan with olive oil. Dust with 2 tablespoons of the flour and tap out any excess; set aside.
Mix sugar and lemon. Place the sugar and lemon zest in a large bowl and rub together with your fingertips until the sugar is moist.
Whisk eggs, sugar, and lemon zest until pale and frothy, then add yogurt, olive oil, and vanilla extract.
Whisk in baking powder and salt, then add flour and stir until just combined.
Transfer the batter to the pan, spread evenly, and bake until lightly browned.
Cool on a wire rack for 15 minutes. Carefully flip it out of the pan onto a wire rack.
Whisk together the powdered sugar and lemon juice in a medium bowl until smooth.
Let stand for at least 10 minutes to allow the glaze to set before slicing and serving.
