1/2 cup ripe papaya, 2 tbsp chia seeds, 1 cup plant-based milk, 1/2 teaspoon honey or maple syrup, A pinch of cinnamon or vanilla extract, fresh papaya cubes or seeds for topping.
Take a bowl, combine chia seeds with your choice of milk. Stir well to avoid lumps.
Add honey or maple syrup and a pinch of cinnamon or vanilla extract, if using.
Cover the mixture and refrigerate for for 2-3 hours or overnight, until it thickens or become pudding-like.
While the chia sets, mash the ripe papaya. You can also blend it into a smooth paste.
Top with fresh papaya cubes or drizzle chia seeds on top and enjoy chilled.
