In a saucepan, bring the water to a boil over medium heat.
Add the crushed cardamoms and grated ginger. Simmer for 2-3 minutes to infuse the flavors.
Add the black tea powder and let it boil for 4-5 minutes. This is important to get the strong, robust flavor of the chai.
Pour in the milk and let it come to a boil again. Simmer for 1-2 minutes.
Remove from heat and strain the chai through a mesh strainer into small tea glasses or cups.
Stir in sugar to taste. The chai should be strong, spicy and sweet.
Serve the cutting chai immediately while hot. Enjoy with biscuits, khari or your favorite snacks.
