Take ½ cup regular rice and ½ cup parboiled rice or idli rice in a bowl or pan.
Rinse a couple of times with water. Then soak rice in 1 cup water for 4 to 5 hours.
Take urad dal and seeds in another bowl. Rinse a couple of times with water. Drain all the water from the urad dal and add in a grinder jar.
Grind urad dal abd rice, then grind and add water.
Heat 1 tbsp of ghee in a pan and add all ingredients like cashew, spices. Pour the tempering mixture in the idli batter. mix well.
Now pour idli batter in the idli moulds lined with banana leaves. Then pour the batter till bowl. Place the bowls on the idli stand.
Steam idli for 20 minutes. Remove the banana leaves and then serve kanchipuram idli hot or warm with coconut chutney and sambar.
