– 2 ripe avocados (cubed) – 1 cucumber (diced) – 1 cup cherry tomatoes (halved) – 1 small red onion (thinly sliced) – 1 tbsp olive oil – 1 tbsp lemon juice – Salt & pepper to taste – Optional: fresh cilantro or parsley for garnish
Wash and chop all vegetables into bite-sized pieces.
In a large bowl, combine avocado, cucumber, cherry tomatoes, and red onion.
Drizzle olive oil and lemon juice over the salad. Add salt and pepper.
Gently toss the salad to coat evenly without mashing the avocados. Garnish with fresh cilantro or parsley and serve immediately!
– Add feta cheese for creaminess. – Sprinkle roasted seeds for crunch. – Include boiled quinoa for a complete meal.
