– 1 cup dried apricots (chopped) – 1 cup all-purpose flour – ½ cup butter (softened) – ½ cup sugar – 1 egg – 1 tsp vanilla extract – ½ tsp baking powder
In a bowl, cream together softened butter and sugar until light and fluffy.
Add in the egg and vanilla extract, then gradually mix in flour and baking powder to form a soft dough.
Gently fold in the chopped dried apricots, ensuring they are evenly distributed.
Scoop small portions of dough, roll them into balls, and flatten slightly. Bake at 170°C (350°F) for 12-15 minutes until golden.
Dust your apricot cookies with powdered sugar or drizzle white chocolate for an extra festive look.
