Grease a heat-safe bowl with butter and line the bottom with parchment paper.
Beat butter and sugar until creamy, then add salt, lemon zest, and eggs.
Mix in self-raising flour, followed by lemon juice, and fold gently.
Spoon the batter into the prepared bowl and cover with greased parchment and foil, sealing with an elastic band.
Steam in a pot of boiling water for 1 hour 30 minutes, checking doneness with a toothpick.
Cool for 5 minutes, then run a knife around the edges and invert onto a plate.
Prepare a lemon sauce by boiling sugar, lemon juice, and water, then thickening with cornflour.
Spoon sauce over the pudding and serve.
