Tasty And Nutritious Sweet Potato Falafel

- 2 sweet potatoes   - 1 can chickpeas   - 2 cloves garlic   - 1 tsp cumin   - Fresh parsley   - Salt and pepper to taste

Ingredients

Prep The Potatoes

Roast the sweet potatoes at 200°C until soft. Let them cool, then peel and mash

Blend The Mixture

In a food processor, blend chickpeas, garlic, cumin, parsley, salt, and pepper. Add mashed sweet potatoes and mix well.

Shape The Rolls

Shape the mixture into small patties or balls.

Bake Or Fry

Bake at 180°C (350°F) for 25 minutes until golden.
