Cooked chicken – 1 cup (shredded), Onions – 2 (thinly sliced), Puff pastry – 1 sheet, Olive oil – 1 tbsp, Thyme – ½ tsp, Cream – 2 tbsp, Cheese – ½ cup (grated), Salt & pepper – to taste.
Heat olive oil in a pan, add sliced onions, and cook slowly on low heat, stirring often until golden and soft (about 20 minutes).
Heat ghee in a pan.
Combine shredded chicken, caramelized onions, thyme, cream, salt, and pepper in a bowl, and mix well to form the filling.
Roll out puff pastry and cut into small rounds or squares to fit mini tart molds or a muffin tray.
Press pastry into molds, spoon in the chicken mixture, and top with grated cheese.
Preheat oven to 200°C (390°F) and bake for 15–20 minutes or until golden and puffed.
Serve warm, garnished with herbs—perfect as appetizers, snacks, or elegant bites for gatherings.
