Pull out two baking sheets and line with parchment paper. Place cashews on one baking sheet & the coconut & sesame together. Slide cashews into the oven for 5 minutes.
Place chocolate chips in a bowl. Pour the hot, toasty cashews over the chocolate chips. Add coconut flakes and sesame seeds.
Scoop the mixture out onto a tray or pan.
Quickly sprinkle the reserved coconut, sesame seeds, and a pinch of salt on top.
Let it harden, then break into pieces. Refrigerate to speed up the process.
Serve the cashew ginger chocolate bark as a treat, or package it up to give as a gift.
