Prepare and chill the pie crust for 30 minutes, then roll out half to line a pie plate and refrigerate.
Mix the filling ingredients and set aside.
Roll out the remaining crust, cut into strips for a lattice top.
Fill the chilled crust, arrange lattice strips, brush with milk, and sprinkle sugar.
Bake at 200°C/400°F for 15 minutes, then at 180°C/350°F for 30–35 minutes.
Cool for 30 minutes, slice, and serve.
