Grate the beetroot finely. You’ll need about 1 cup of grated beetroot for the recipe.
In a bowl, whisk together the eggs, vegetable oil, and vanilla extract until smooth.
n a separate bowl, sift together the flour, cocoa powder, baking powder, and salt.
Gradually fold the dry ingredients into the wet mixture. Add the milk and mix until smooth.
Adding grated beetroot to the cake batter.
Pour the cake batter into a greased cake pan and bake at 350°F for 30-35 minutes.
Allow the cake to cool completely before slicing. Enjoy it as is, or add a dusting of powdered sugar or frosting.
