Ingredients needed - Shredded coconut, coconut oil, All-purpose flour, Baking powder and baking soda, Salt, Egg, Vanilla extract, White granulated sugar, Milk.
Preheat your oven to 175C / 347F
Add butter and sugar in a large bowl. 1. Slowly mix in each egg one at a time, then add the vanilla extract and lemon zest.
Slowly pour in the milk while whipping the mixture.
Sift in the flour, baking powder, and salt. Next, add the shredded coconut.
Then, fold the dry ingredients into the batter using a rubber spatula.
Using a spoon or piping bag, equally distribute the batter into the muffin cups until approximately ¾ full.
Bake for approximately 20-22 minutes. Try not to overbake, as they can result in dry muffins.
