Slice cucumber into thin strips. Cook sushi rice and let it cool. Gather nori (seaweed) sheets and rice vinegar.

Once the sushi rice is cooked, mix it with a splash of rice vinegar, a pinch of sugar, and a little salt to season.

Place a sheet of nori, shiny side down, on a bamboo sushi mat.

Spread a thin layer of sushi rice evenly over the nori, leaving about a 1-inch gap at the top edge.

Place a few strips of cucumber along the center of the rice, then roll tightly using the sushi mat.
