In a large bowl, whisk the flour, baking powder, baking soda, salt, cinnamon, ginger and nutmeg together until well combined.
Gather a medium bowl, and whisk the yogurt with the milk, pumpkin puree, eggs, maple syrup, and vanilla.
Slowly drizzle in the melted butter, whisking until smooth. Pour the wet ingredients into the dry and stir to combine.
Heat a large skillet over low heat. Grease with oil and spoon ¼ cup batter onto the skillet, leaving space for spreading.
Cook for 2-3 minutes until golden, then flip and cook for another 2-3 minutes.
