Soak wooden skewers and prepare shrimp by peeling, deveining, and threading 3-4 on each skewer.
Season shrimp with salt and pepper.
Mix marinade ingredients and coat shrimp evenly. Let sit for 30 minutes.
Preheat a lightly oiled grill.
Grill shrimp 1-2 minutes per side, basting with remaining marinade.
Garnish with scallions or chives before serving.
