Lingkan Reang
Soak grinding ingredients with vinegar for 15 minutes, then blend into a smooth paste.
Marinate mutton with the paste, salt, and sugar for 1 hour or overnight.
Heat oil in a kadai, cook chopped onions until golden brown.
Add marinated mutton, saute for 5-6 minutes until well seared.
Add a little water, cover, and cook on low heat for 1-2 hours until tender.
Garnish with coriander leaves and serve with your choice of bread.
