To make this 1 cup rice, 1/4 cup urad dal (split black gram), 1/2 tsp fenugreek seeds, 1/4 tsp baking soda, Salt to taste, Water (for soaking and grinding).
Wash the rice, urad dal thoroughly, and fenugreek seeds for 4-6 hours or overnight.
Drain the soaked ingredients, grind them with a little water to form a smooth batter (similar to dosa batter consistency), and let it ferment for 8-12 hours.
Preheat an appe pan on medium heat, then add a few drops of ghee or oil into each depression.
Pour a spoonful of batter into each well, cover, and cook on low heat for 3-4 minutes until the bottom turns golden brown.
Flip each appe using a spoon or fork and cook for another 2-3 minutes until both sides are crispy and golden brown.
Serve your crispy, golden Appe hot with coconut chutney and sambar for the perfect South Indian meal.
