Preheat oven to 220°C (425°F), toss tomatoes and garlic with oil, paprika, salt, and pepper, and roast for 40-45 minutes.
Heat oil in a pot, saute garlic and onion until translucent.
Add roasted tomatoes, garlic, and vegetable stock to the pot.
Blend with a stick blender until smooth.
Simmer for 10 minutes, then stir in cream.
Serve in bowls, drizzle with cream, garnish with basil, and enjoy with grilled cheese.
