Salt the cucumber slices and place them in a colander. Let drain for 15 minutes.
Cook noodles in a large pot with salt in the boiling water. Drain and rinse with cold water.
Mix rice vinegar, sesame oil, soy sauce, sugar, and ginger in a bowl. Add green onions and salted cucumbers.
Toss the cooled noodles to the bowl and toss well.
Your perfect spicy cold noodle salad is ready. Serve with a squeeze of lime juice if desired.
