Preheat your oven to 375°F (190°C) and line a muffin tray with paper cups.
In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
In another bowl, beat the egg, milk, melted butter, and vanilla extract until well combined.
Slowly add the wet ingredients into the dry mixture, stirring gently until just combined. Be careful not to overmix.
Divide the batter evenly among the muffin cups, filling each about ¾ full.
Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
Let the muffins cool for 5 minutes in the tray, then transfer them to a wire rack to cool completely. Serve warm with tea!
