Coat chicken with cornstarch and set aside.
Cook chicken in hot oil for 2-3 minutes, then drain.
In the same pan, saute cashews, garlic, and chillies in butter until golden.
Add onions, capsicum, and salt, cook until golden.
Stir in spice powders, then toss in chicken with a splash of water.
Add lemon juice and coriander leaves, mix, and serve.
