Core the peppers and slice into thin slices. Set aside.
Heat mustard oil in a pan over meadium heat.
Add minced garlic, mustard seeds, curry leaves, re chillies and oil to a pan. Sprinkle over dried thyme and cook until fragrant.
Add the peppers to the pan and cook.
Chop the chives and add to the peppers.
Make the frittata mixture. Pour 6 eggs into a bowl, add Parmesan cheese and mix.
Add the pepper mixture to the bowl with the egg and mix well. Pour the mixture into a pan and allow to cook.
Cook until the bottom becomes golden brown. Place a plate over the pan, and quickly flip it over.
Your Bell Pepper Frittata is ready. Serve and enjoy.
