You need a coconut milk, water, some spices, curry leaves onion, potatos, lobia, ash gourd, salt.
Rinse ½ cup red cowpeas (lobia) in fresh water.
Next day drain all the water. Add the soaked cowpeas and water in a pressure cooker. Add salt and mix it.
In a pan, take the chopped ash gourd. Also, add 8 curry leaves and 4 green chilies. Season with salt.
Now add 1 cup water, cover the pan and on a low heat.
Now open the lid and add the cooked cowpeas. Add 1 cup of thick coconut milk & mix very well.
Now heat the curry for 4 to 5 minutes. Do not boil. Add curry leaves, coconut oil. Mix well. Cover and let the flavors infuse for 6 to 8 minutes.
Serve olan curry hot with steamed rice.
