- 200g digestive biscuits - 100g melted butter
500g cream cheese - 300ml double cream - 100g powdered sugar - 1 tsp vanilla extract - 100g blueberry jam
Crush the biscuits and mix them with melted butter. Press the mixture into the bottom of a springform pan, and refrigerate for 30 minutes.
Whisk cream cheese, sugar, and vanilla until smooth. Fold in whipped double cream until the mixture is light and fluffy.
Spread the filling evenly over the biscuit base. Refrigerate the cheesecake for at least 4 hours or overnight.
Spread the blueberry jam over the chilled cheesecake for a fruity burst of flavor. Garnish with fresh blueberries if desired.
