Soak sliced sweet potatoes in salted water for 15 minutes.
Heat oil in a pan, add mustard and cumin seeds until they splutter.
Add ginger and curry leaves; sauté until fragrant.
Add onions and salt; cook until golden.
Drain sweet potatoes and add to the pan with turmeric.
Stir-fry for 3-5 minutes, cover, and cook until tender.
Season with red chili powder and garam masala before serving.
