– 2 medium sweet potatoes (peeled and diced) – 1 bell pepper (sliced) – 1 small onion (chopped) – 2 garlic cloves (minced) – 2 tbsp olive oil – 1 tsp soy sauce – 1/2 tsp paprika – Salt and pepper to taste – Optional: Sesame seeds and green onions for garnish
– Heat 1 tbsp olive oil in a large skillet. – Add diced sweet potatoes and cook on medium heat for 8-10 minutes, stirring occasionally, until slightly tender.
– Add another tbsp of olive oil to the skillet. – Toss in onions and garlic, cooking until fragrant. – Add bell peppers and sauté for 3-4 minutes.
– Add the sweet potatoes back into the skillet. – Drizzle with soy sauce, sprinkle paprika, salt, and pepper. – Stir well to coat everything evenly.
– Cook for another 5 minutes until sweet potatoes are fully tender. – Garnish with sesame seeds and green onions, if desired.
