You will need a Sourdough bread, Fresh mushrooms, Shallot and fresh garlic, Cheese, fresh herbs, – Salt, black pepper, and chili flakes to taste.
Heat oil over medium and add the mushrooms, salt, and pepper. Stir until golden and tender, then lower heat to medium-low.
Add aromatics and herbs. Make a well in the center of the pan and add more oil if needed. Sprinkle in shallots, garlic, and thyme. Stir in the center for 1-2 minutes.
Spread or layer the cheese over two slices of bread, place on rack in oven.
When the cheese is melty, pile the mushroom mixture on top of the toasted bread.
Drizzle a little truffle oil over top of the creamy mushroom toast. Garnish with fresh herbs, like thyme or parsley.
