For the Crust: – 1 ½ cups all-purpose flour – ½ cup unsalted butter, cold and cubed – ¼ cup powdered sugar – 1 egg yolk – A pinch of salt For the Filling: – 200g dark chocolate (70% cocoa), chopped – ½ cup heavy cream – 2 tablespoons unsalted butter – 1 tablespoon sugar
In a bowl, mix flour, powdered sugar, and salt. Add cold butter and combine until crumbly. Mix in the egg yolk to form a dough.
Roll out the dough and press it into a tart pan. Chill for 30 minutes. Bake at 350°F (175°C) for 15-20 minutes until golden.
Heat heavy cream in a saucepan until it starts to simmer. Pour it over the chopped dark chocolate in a bowl. Let sit for 1-2 minutes, then stir until smooth.
Stir in butter and optional sugar to the ganache for a glossy, silky finish.
Pour the chocolate ganache into the baked crust. Smooth the surface with a spatula.
