1 cup all-purpose flour, 1/2 cup ground pistachios, 1/2 cup sugar, 1/2 cup unsalted butter, 2 eggs, 1/4 cup milk, 1 tsp vanilla extract, 1 tsp baking powder, a pinch of salt.
Cream together butter and sugar, then add eggs, milk, and vanilla extract.
In a separate bowl, mix flour, ground pistachios, baking powder, and salt.
Gradually fold the dry ingredients into the wet mixture until smooth.
Preheat the oven to 350°F (175°C). Spoon batter into cupcake liners, bake for 18-20 minutes, and let cool.
Once cooled, transfer the cupcakes in a serving dish. Enjoy your soft, nutty pistachio cupcakes.
