1 cup vermicelli noodles, 1/2 cup chicken/shrimp, 1/2 cup cucumber, 1/2 cup carrots, 1/4 cup mint, 1/4 cup cilantro, 2 tbsp fish sauce, 2 tbsp lime juice, 1 tbsp palm sugar, 1-2 tsp Thai chili sauce, salt, peanuts.
Cook the vermicelli noodles according to package instructions. Drain and set aside.
Chop the cucumber, carrots, mint leaves, and cilantro. Set aside.
Cook the chicken or shrimp according to your preference. Chop into small pieces and set aside.
In a small bowl, mix together fish sauce, lime juice, palm sugar, and Thai chili sauce.
In a large bowl, combine the cooked vermicelli noodles, chopped vegetables, cooked protein, and dressing. Mix well.
Season with salt to taste. Garnish with peanuts and serve immediately.
