Shred or dice cooked chicken and set aside.
Chop your favorite fresh veggies like lettuce, cucumber, tomatoes, and bell peppers.
In a small bowl, whisk together mayonnaise, olive oil, lemon juice, salt, and pepper.
In a large bowl, toss the chicken, chopped veggies, and dressing. Mix until well combined.
