Toast whole grain or sourdough bread slices until crisp.
Lightly sauté chopped zucchini and spinach in olive oil for 2 minutes.
Spread a layer of tomato sauce over the toasted bread.
Spoon cottage cheese over the tomato sauce for a creamy base.
Add the sauteed zucchini and spinach, followed by halved cherry tomatoes.
Sprinkle fresh basil leaves on top and season with salt and pepper.
