Start by blending 1 cup of rolled oats into oat flour using a blender or food processor.
In a bowl, whisk together 1 cup almond milk, 1 egg, vanilla extract, and honey.
Add the oat flour to the wet ingredients, then whisk until smooth.
Heat a non-stick skillet over medium-low heat. Pour a small amount of batter and swirl to coat the pan.
