Chop all the vegetables into bite-sized pieces and cube the tofu or chicken if using.
In a large pan or wok, heat olive oil over medium-high heat until hot.
Add tofu or chicken to the pan, cook until golden and crispy, and set aside.
Add garlic, ginger, and vegetables to the pan. Stir-fry for 3-4 minutes until veggies are tender but crisp.
Pour in soy sauce, toss everything to coat evenly, and cook for another minute.
Sprinkle sesame seeds on top and serve hot with brown rice or quinoa for a complete meal.
